We are beef jerky addicts…

We make our own and keep it the consoles of the utes for on the drive snacks.

All hell breaks loose when someone eats it all and doesn't do a refill.

One of us doesn't like it too spicy and this causes compromises .

 

Anyone else make their own?

This was the lasbatch that kept everyone happy

 

Topside Beef - Lime Garlic Smoke Paprika 

 

Lime juice (Woolworths Zesty Lime Juice) - 1/4 cup

Soy sauce (Lee Kum Kee premium soy sauce) - 2 Tablespoon

Black pepper (fine ground) - 1/4 teaspoon

Worcestershire (Holbrooks) - 2 Tablespoon

Smoked Paprika Sweet (Hoyts) - 2 teaspoon

Garlic dried powdered - 1/2 Tablespoon

dry chilli flakes after marinating (so someone can brush them off)

My brother used to make it years ago im not 100% sure but i think you need a food dehydrator.

I decided to go Keto/Carnivore eating for a while to shed some blubber - had a bad experience with some shredded cabbage this morning - seated for a while.

you can expect a mass reduction of up to 4:1

 

Dehydrator input

1000 g whole muscle meat in > yields 250 g extra tough ~ 330 g soft dried jerky out

but

Mouth input

dehydrated jerky in < rehydrated meat in your digestive tract

Yeah, first time I've had problems since I had my Gall bladder out 3 years ago Drew - got the recipe off a Keto cookbook - so lot of butter added to the cooking to compensate for the lack of carbs - used to take apple cider vinegar in the past and will get back to it now.
