Fairly new to it all but I find that two passes with the whipper snipper is necessary. The first one to cut through it and second to clean it up. One pass seems too slow. Any comments?

One pass for your vertical edge ...A second pass for your horizontal edge finish

Only really need 2 passes sometimes for edges that havn't been done for ages/overgrown.  On the regulars once you get that grove in 1 quick pass is all you need.
